Vegan + Mixed = Vixed!...

...as it states on the website for Vixed Baking Company. They recently launched Chocolate Chip Muffin and Banana Bread mixes primarily through an online shop with shipping throughout the US. Owner Farukh touts on her Instagram bio that Vixed is "woman-owned, Afghan-run, and Virgo-sustained" as well as made in Minneapolis. How many great reasons do you need to support a new company?

Farukh sent me one of each mix, and let's be real -- this is my kind of baking. All you need for each of them is two bananas, oil, and plant milk. The consistency of the product will depend on how ripe your bananas are, as well as how well you mash them up. She noted that she prefers soy milk, but all I had on hand was Silk's Coconut Almond Milk.

Here's the one and only piece of baking advice that I will probably ever be able to offer: when it comes to plant milk, use the unsweetened original variety of whatever you're using. If it's sweetened, it'll mess up your sugar levels. If it's vanilla, it'll mess up your overall flavor. I've made this mistake, and it's not pretty.

I started with the Chocolate Chip Muffin mix. I'm not much of a baker, but by luck (it's a weird story) I have a small silicon muffin tray. It's only enough for twelve mini muffins, though, so after the first round I switched to a bread pan, which worked well. This one needs about twenty minutes to bake.

Isn't it beautiful?? It tastes as good as it looks, too! It honestly took all of my willpower to not inhale the whole thing in one sitting. It's moist, not overly sweet, and the mini chocolate chips are the perfect choice.

The banana bread was also easy to prepare, but it takes a little longer in the oven. The back of the bag recommends thirty-five to forty minutes, but ovens vary and mine ended up taking about fifty minutes.

This one turned out a little softer than the muffin mix, so it was somewhat difficult to cut it into slices. I ended up putting it in a container and spooning it out little by little (ok, a lot by a lot). It's too good!

I love how simple these mixes are, and I look forward to making them again. The prices are reasonable, and I'm excited to see what Vixed offers next.
